Kale Salad with Creamy Zucchini Dressing

An excellent salad for a type A lunch.


General applicability:

Kale Salad with Creamy Zucchini Dressing
Green: recipe contains only neutral or a beneficials ingredients for that type.

Ingredient list:
  • 1 cup (200gm) red or white quinoa
  • 2 cups (500ml) water
  • 200 gms purple kale, trimmed, washed and shredded
  • 1 large carrot, grated
  • 1 cup walnuts roasted and chopped
  • 2 small zucchini (150 gm) grated ,
  • 1 large avacado (320 gm) chopped , 1/2 cup (35gm) walnuts roasted , 1 clove garlic, crushed , 1 tbsp. white wine vinegar , 2 tbsp. walnut oil , 2 tbsp. olive oil.


How to make it:
  • Place the quinoa in the water and bring to the boil. Reduce the heat to low and simmer. Drain and let cool.
  • Place the quinoa in a bowl and add the kale, carrot and walnuts.
  • To make the zucchini dressing.
  • Process the zucchini, avacado , garlic, walnuts and vinegar. Gradually add the oils in a steady stream until thick and creamy.
  • Add water till you reach the desired consistency.
  • Combine the quinoa mixture with the zucchini dressing.
