General applicability:

Sweet Potato Pie for 1
Green: recipe contains only neutral or a beneficials ingredients for that type.

Ingredient list:
  • 1 sweet potato, baked for 60 minutes at 375 degrees
  • 1 pie crust, unbaked, per type
  • 1/4 cup + 2 Tablespoons honey
  • 1 & 1/2 teaspoon vanilla or almond extract
  • 1/2 teaspoon salt
  • 1/4 cup flour (wheat or spelt)
  • 1/2 teaspoon coriander
  • 1/4 teaspoon anise
  • 1/2 teaspoon xanthan gum - if using spelt flour
  • 3/4 cup nut halves per type
  • 1 Tablespoon cornstarch or arrowroot, per type
  • 1 teaspoon molasses or maple syrup


How to make it:
  • Prepare unbaked regular or wheat free pie crust according to type.
  • Mash 2 cups cooked sweet potatoes in 1/2 cup water.
  • Mix in 1/4 cup honey, 1 teaspoon vanilla or almond extract, salt, flour, coriander, and anise.
  • If using spelt flour, add xantham gum.
  • Pour the mashed potatoes in the unbaked pie crust.
  • Arrange nut halves on top.
  • Combine 2 Tablespoons honey, molasses or maple syrup, 1/2 cup water, and 1/2 teaspoon vanilla or almond extract and bring to a boil in saucepan.
  • Combine 2 Tablespoons water and cornstarch or arrowroot.
  • While liquids are boiling, add the cornstarch or arrowroot and water, stirring constantly.
  • Remove from heat and dribble over top of pie.
  • Bake at 350 degrees for 60 minutes.
