Ingredient list:
  • 3 Tablespoons olive oil
  • 1 medium onion pealed and chopped
  • 1 Tablespoon fresh ginger sliced
  • 4 cloves garlic chopped
  • 1 teaspoon ground cumin
  • 2 teaspoons ground coriander
  • 1/4 teaspoon ground turmeric
  • 1/8 teaspoon cayenne {optional}
  • 2 medium potatoes peeled and diced
  • 1/2 pound cauliflower florets
  • 5 cups vegetable broth
  • 2/3 cup 1/2 and 1/2 {optional}


How to make it:
  • Heat oil in a large pot and cook onion, ginger and garlic for a few minutes.
  • add spices stir then add vegetables and broth.
  • Boil slowly for 10 minutes covered or until potatoes are tender.
  • Blend in blender or pot.
  • Add cream if desired and reheat.
