General applicability:

Zucchini Muffins
Green: recipe contains only neutral or a beneficials ingredients for that type.

Ingredient list:
  • 3 eggs
  • 1 cup oil
  • 1 cup sugar
  • 1/2 cup honey
  • 2 teaspoon vanilla
  • 2 cups grated raw zucchini
  • 1 teaspoon cinnamon
  • 1 teaspoon salt
  • 1 teaspoon soda
  • 1/4 teaspoon baking powder
  • 1 cup spelt flour
  • 1 cup rice flour
  • 1 cup rye flour


How to make it:
  • Beat eggs, oil, sugar, honey, and vanilla together.
  • Add the zucchini.
  • Add dry ingredients in the order listed.
  • Bake at 350 degrees until the muffins begin to pull away from the sides of the pan.
  • Makes 2-1/2 to 3 dozen regular muffins.
  • (Note about flour. The original recipe that I altered called for 3 cups of wheat flour. I used this combination of three flours for my O&A family. The texture was very nice. I expect other flour combinations adding up to 3 cups would also work.)
